Sticks’n’Sushi, an international fast-growing restaurant chain wanted a mobile expension for major festivals and corporate events. Initially, they were interested in a food truck. However, based on our calculations, we were able to demonstrate that allocating a larger budget to create a larger “mobile restaurant” would be much more efficient and effective.
A mobile restaurant would generate additional visibility for premium brand Sticks’n’Sushi and make it stand out more. Built on a trailer, the restaurant can be used at a wider variety of events. Furthermore, the mobile restaurant has a much larger capacity and thus greater revenue potential—up to six or seven times as much.
After crafting the business case, Next Level Concepts handled the restaurant’s entire creative and technical designs, and complete construction. The highly efficient, high-capacity kitchen layout is based on the proven methodology used in the Sticks’n’Sushi restaurants in Copenhagen, London, and Berlin. This is a full-service tailor-made concept.
We transported the mobile restaurant to Denmark and trained the team onsite on how to work inside the trailer. A few months later, we returned to check on their progress and brainstorm potential optimizations. In their unique mobile restaurant, Sticks’n’Sushi serves high-quality dishes in large quantities at numerous private and large public events.
