HMSHost International asked us to organize a food truck festival in the intercontinental passenger zone at Oslo Gardermoen Airport. It should feature a variety of food trucks offering a specific range of food and drinks and have an outdoor festival vibe.

The location itself presented the biggest challenge. Airports have very strict requirements, particularly in terms of security. Next to that there’s high footfall and erratic influx of people to consider, yet potential guests might not have much time to wait for their food. Therefore, we needed to deliver high volumes of high-quality food to generate a profitable turnover.

Full-service from initial concept to staff training

As a full-service partner, Next Level Concepts took on this project in its entirety, handling everything from the initial concept and complete design to menu development, construction, and delivery. This included transport to the airport terminal, the entire installation on site and staff training. Everything was built in the Netherlands and installed in Oslo – during the nighttime closing hours – via the terminal’s façade at a height of 12 meters using large cranes.

The final setup consists of a variety of food trucks offering a wide range of high-quality dishes and beverages, a central ordering and pickup unit, and a highly efficient back-of-house kitchen. We chose functional solutions, that took the location’s requirements and constraints into account. And made the impossible possible by meticulously by thinking through and planning the entire process – from the first sketch to serving the first dish. The concept was delivered turnkey, and it can be re-used at multiple locations.
